White Bean Soup With Croutons

For this soup I’ve been inspired during a lovely time of 3 weeks holiday in Tuscany some years ago. Visiting a little village there , where two italian women cooked and served food in the kitchen of a little house and served it in front of it in the garden under the trees. Great view around over the landscape, shadow under the trees and sharing lunch with their guests who met first time sitting together at the table. For moments one had possibly been thinking: where’s the camera, what kind of movie ‘s done here? Amazing day and time….. talking to the two women while they had been cooking in the kitchen…and how they did the recipes. There’s been a salad with those white beans for that hot day…and we talked about how they did soup with it on other days. Made of white beans, with herbals and crostini, …croûtons. Obviously people are fond of that simple and delicious soup not only in Italy. Please have a look here at another one’s ideas for it’s recipe.
